Fisincan Plov: A Flavorful Azerbaijani Rice Dish
Fisincan Plov is a traditional Azerbaijani dish that combines aromatic rice with a rich and tangy walnut-pomegranate sauce. This delicious pilaf is often enjoyed during special occasions and family gatherings. Ingredients:
- 2 cups basmati rice
- 500g lamb or beef, cut into small pieces
- 1 large onion, finely chopped
- 1 cup walnuts, ground
- 1 cup pomegranate molasses
- 3 tbsp butter or vegetable oil
- 1 tsp turmeric
- 1 tsp cinnamon
- 1/2 tsp black pepper
- 1/2 tsp salt (or to taste)
- 3 cups water or broth
- 1 tbsp sugar (optional)
- Fresh pomegranate seeds (for garnish)
Instructions:
- Prepare the Rice: Wash the basmati rice thoroughly and soak it in warm water for 30 minutes. Drain before cooking.
- Cook the Meat: In a deep pan, heat the butter or oil and sauté the chopped onion until golden brown. Add the meat and cook until browned.
- Add Spices & Sauce: Stir in turmeric, cinnamon, black pepper, and salt. Then, add the ground walnuts and mix well. Pour in the pomegranate molasses and let the mixture simmer for 10-15 minutes until it thickens. If desired, add a tablespoon of sugar for extra sweetness.
- Prepare the Rice: In a separate pot, bring 3 cups of water or broth to a boil. Add the soaked rice and cook until it is tender but not mushy. Drain excess water if necessary.
- Assemble & Serve: Layer the cooked rice and the fisincan sauce in a serving dish, ensuring that the flavors blend beautifully. Garnish with fresh pomegranate seeds for an extra burst of color and flavor.
