    Ingredients for Shah Plov

    • 500 g lamb or chicken (cut into bite-sized pieces)
    • 2 onions (finely chopped)
    • 1/2 cup dried apricots
    • 1/2 cup raisins
    • 1/2 cup chestnuts (boiled and peeled)
    • 2 tbsp butter
    • 1 tsp cumin
    • Salt and pepper to taste

    For the Lavash/Dough Crust:

    • 3 large sheets of lavash bread (or thin dough)
    • 3 tbsp melted butter (for brushing)

    Instructions for Making Shah Plov

    Step 1: Preparing the Saffron Rice

    1. Rinse the rice under cold water several times to remove excess starch.
    2. In a large pot, bring water to a boil. Add a pinch of salt and the rinsed rice. Boil for 7-8 minutes until the rice is half-cooked (al dente).
    3. Drain the rice and rinse it with cold water to stop the cooking process. Set it aside.
    4. Stir the soaked saffron water into the rice, giving it a light golden color and fragrant aroma.

    Step 2: Cooking the Filling

    1. Heat 2 tbsp of butter in a pan over medium heat.
    2. Add the chopped onions and sauté until they become soft and golden.
    3. Add the lamb or chicken pieces, and cook until they are browned on all sides.
    4. Mix in the dried apricots, raisins, chestnuts, cumin, salt, and pepper. Stir everything together and cook for another 5-7 minutes, ensuring the flavors blend.

    Step 3: Assembling the Shah Plov

    1. Preheat your oven to 180°C (350°F).
    2. Butter the bottom and sides of a deep round baking dish.
    3. Line the dish with lavash bread or thin dough, letting the edges hang over the sides. Brush the lavash with melted butter.
    4. Layer the dish with alternating layers of rice and the prepared filling. Start with a layer of rice, followed by a layer of the meat and fruit mixture. Repeat until you’ve used up all the ingredients, finishing with a top layer of rice.
    5. Fold the overhanging edges of the lavash to cover the top. Brush more melted butter over the top to ensure a golden crust.

    Step 4: Baking the Shah Plov

    1. Cover the dish with foil and bake for 45-50 minutes until the crust becomes golden and crispy.
    2. Remove the foil during the last 10 minutes to allow the top to brown nicely.

    1. Let the Shah Plov rest for 10-15 minutes after removing it from the oven to allow the flavors to settle.
    2. Carefully invert the dish onto a large serving platter, presenting the beautifully golden crust.

    Tips for Perfect Shah Plov
